2021 Sheep by Il Verro
We visited this winery in December 2021. It is a white wine made with an autoctone grape : pecora( sheep ). The winery is located near Caserta and its part of that section of the wine regions in Campania.
*Appearance**: Sheep by il Verro presents a brilliant, pale straw yellow color with greenish reflections. Its clarity and brightness suggest a well-crafted wine. The viscosity is medium low (12.5%abv).
**Nose**: On the nose, this wine offers a captivating bouquet of fresh citrus fruits, including lemon and lime, intermingled with delicate floral notes of white blossoms and elderflower. Subtle hints of green apple, pear, and a touch of minerality add complexity to the aromatic profile.
**Palate**: The palate is greeted with vibrant acidity, balancing the wine's fruity and floral characteristics. Crisp flavors of green apple, citrus zest, and a touch of white peach dominate, followed by nuances of freshly cut grass and a subtle minerality. The wine's medium body and well-integrated acidity make it refreshing and lively, with a clean, lingering finish.
**Finish**: The finish is long and refreshing, leaving a pleasant aftertaste of citrus and mineral notes, encouraging another sip.
**Overall**: Sheep by il Verro is a finely balanced wine that showcases the purity and elegance of its terroir. Its harmonious blend of fruit, floral, and mineral elements, coupled with its crisp acidity, makes it an excellent choice for pairing with a variety of dishes, particularly seafood, light salads, and soft cheeses.
